This is our selection, not a vote. No panel, no ballot, no averaging of other people's lists: fifty bars in twenty-one cities, each one reviewed in full against the same five dimensions — The Pour, The Room, The Crowd, The Tab and The Night — whether it is an eight-seat counter in Tokyo or a standing bar in Milan's Galleria.
The order is our editorial score: the five dimensions of each review, weighted with The Pour heaviest and shown to one decimal. Gen Yamamoto leads at 8.9. Where two bars show the same score, the order comes from the unrounded figure behind it, and where that is level too, from the Travault Score and then The Pour. One bar, Bemelmans, carries an editor's adjustment of +0.2 for its room, and both its score and its place include it.
Every price on these pages is one the bar published itself, and each page shows when we read it. For twenty-six of the fifty we could not find a price the bar publishes, and we print none. Every award a page names carries its year.
