Iain McPherson opened it in a basement he calls the Brain Melting Society's home ground — a research kitchen dedicated to what sub-zero techniques do to a cocktail. The bar says it released a technique it calls Switching in 2019, and claims it was the first bar to buy a freeze dryer. The current menu, TRANSCEND, runs in four chapters — Switching, Sous Pression, Freeze Drying, Cryo Concentration — and it is why the room lands at No. 34 on the World's 50 Best Bars list for 2025. It is a serious drinks programme wearing a speakeasy costume.
