Thirteen Seats, Four to a Party, No Reservations
Bar Trench in Ebisu is walk-in only, caps parties at four, and seats thirteen. Come for absinthe served with a sugar cube and a deep back bar, and keep the Annex across the street as the fallback.
Thirteen seats, no reservations, and a hard cap of four people to a group. That is the door at Bar Trench, the cocktail bar in Ebisu-nishi, Shibuya, run by Small Axe Inc. under Chief Bartender Rogerio Igarashi Vaz. One guide calls it one of Tokyo's most distinctive cocktail bars. The draw is absinthe, plus a back bar of herbal liqueurs, bitters and amaro.
Bar Tram is Trench's sister bar, and Trench has appeared in world bar rankings since 2014. The reason to go is the counter, the drinks and a door that rewards showing up early and travelling light.
Bar Trench is built on absinthe and a deep back bar, and guarded by thirteen seats, no reservations and a cap of four.
Editorial Deep
Absinthe is the centre of the menu. The drip is served the traditional way, with a sugar cube and dripping water, and the bartenders are described as dab hands at it. The absinthe frappe takes the same spirit with lime, orgeat syrup and mint.
The room is narrow and intimate, with a counter and a few tables totalling thirteen seats. Spirits fill the back bar behind the counter.
The four-person cap shapes the crowd more than any dress code. Parties of five or more cannot sit at Bar Trench. What holds the mix back is that same limit: with thirteen seats and walk-in only, the room draws a narrow range of parties, and larger groups are sent across the street to TRENCH ANNEX.
What the money buys is absinthe service, a deep back bar and a drink from a bartending team with real competition pedigree, in a room of thirteen seats. The real expense is access: with no booking and a stool that may be taken, you pay in time and flexibility. Whether that is worth it depends on how much you want the absinthe drip and the classics.
Bar Trench is an anchor for one drink or two, not a full evening. Walk-in only means no guarantee of a stool, so keep TRENCH ANNEX across the street as the backup. Start with the absinthe drip, follow with a classic, and move on when the seat is wanted.

Absinthe drip, with a classic such as the Sazerac or Old Fashioned as the second order
“A thirteen-seat counter built on absinthe and a deep back bar; it takes no reservations and caps parties at four.”

Go for the absinthe drip and the Sazerac or Old Fashioned, and treat Bar Trench as a first or second drink rather than the whole night. The door is the cost: no reservations, thirteen seats and a four-person cap. Parties of three or more who want certainty should book TRENCH ANNEX across the street on TableCheck.
