The Cocktail Bar That Serves You a Five-Course Dinner First

Alex Francis and Barney O'Kane left Little Red Door to open a Sentier counter where the food comes plated and the cocktails come in thirds. Book with a deposit and know what you're walking into.

The first bite is a fermented oyster mushroom crisp, and it arrives before any drink does. That is the tell. De Vie opened on rue Saint-Sauveur in 2025 with an ex-Little Red Door pedigree — Alex Francis and Barney O'Kane, two names anyone tracking the modern Paris cocktail scene will recognise — and cocktail-first drinkers turning up expecting a stool and a menu leave frustrated within the first course. The ground-floor Comptoir is a tasting counter. Five courses of food, drinks poured in tasting portions to match, red marble beneath a vaulted ceiling. The room reads bar. The evening runs like a restaurant.

The venue splits three ways and the split matters before you book: Comptoir upstairs for the pairing experience, a proper cocktail bar in the basement for the session drinking, and the adjacent Cave for wine retail. The awards shelf built quickly — N°34 on Europe's 50 Best 2026, the Sustainable Bar Award the same year, and Tales of the Cocktail's Best New International Cocktail Bar. Pick the wrong door and you will spend the night frustrated by an evening someone else would fly in for.

Book the Comptoir if you want a dinner that happens to be paired with cocktails, and the basement if you came to drink.

Everything is distilled or macerated in-house where possible, sourced from independent French growers, and the ice is gone entirely — a technical choice that shapes dilution, temperature and glassware across the whole programme. The Chinotto is the one to ask about if it is still on the menu; the programme turns with the seasons and by the time you sit down it may be an Amelanchier or a Blackberry doing the same work in a different key.

Arrive at 18h00 when the doors open and the Comptoir is a quiet, considered space — the red marbled counter catches what little light there is, the vaulted ceiling holds the sound down, and the staff have time to talk through what is on the menu that week. By 21h00 the counter is full, the pace tightens against the tasting-menu clock, and the basement bar downstairs is where the room's energy has moved to.

The Comptoir crowd is people who read the awards list before they booked — sustainability-minded drinkers, bar-industry visitors, Parisians who know Little Red Door and came to see what the founders did next. It is a quiet counter, six or eight guests moving through five courses at a similar pace, which means the room's energy is controlled and conversational rather than loose. If you want a bar where the crowd is the show, this is the wrong seat — go down to the basement or up the road.

Judged as a cocktail bar tab it looks steep for what pours as three drinks' worth of liquid; judged as a paired tasting menu at a room that just took Sustainable Bar of the year in Europe, it is defensible and lands well below the modern Paris tasting-menu tier. Which number is the right one depends entirely on which door you booked for.

This is the best version of a paired-tasting cocktail counter in Paris right now, and it is not the best version of a cocktail bar — those are two different questions and De Vie only answers one of them well. Come back for the Comptoir when the menu turns because the whole programme rewrites itself and repeat visits deliver new drinks. Do not come back if what you wanted the first time was a stool, a Negroni variation, and three more after it — the staff themselves will send you to Abstract or Danico up the road, and you should take them up on it.
