A New Orleans-by-way-of-Paris oyster house on Bedford Avenue, built around an absinthe fountain and thirty-plus varieties of oyster. Book the garden or walk in to the bar — those are the two right answers.

The absinthe fountain sits at the center of the horseshoe bar, a working replica of the one at the Olde Absinthe House in New Orleans, dripping ice water into glasses of Pernod-green liquid while a bartender in a white jacket watches the louche bloom. This is the first thing you see. Everything else at Maison Premiere — the marble, the tile, the small forest of oysters on ice — arranges itself around that centerpiece.

It opened on Bedford Avenue in 2011, back when Williamsburg was still deciding what kind of neighborhood it wanted to be, and it planted a flag for a very specific answer: a New Orleans-by-way-of-Paris oyster house with twenty-plus bottles of absinthe and a raw bar drawing from thirty varieties on a slow day. The James Beard Foundation named it Outstanding Bar Program in 2016. It was on the World's 50 Best Bars list from 2014 to 2016, on North America's 50 Best every year from 2023 to 2026, and on every serious New York bar list for over a decade. It is not a discovery. It is a decision.

The Maison Absinthe Colada is the drink to order. Silky and floral with an anise finish that keeps the sweetness in check, it is the house making its case for why the absinthe collection exists in the first place — twenty-plus bottles behind the bar, the deepest premium selection in the city, and this is what they do with it. Skip it and you have missed the argument.

The Bedford Avenue entrance gives nothing away. A narrow door, a small sign, and then a room that behaves like it was airlifted in from another century — marble bar top curled into a horseshoe, mosaic tile underfoot, mirrors and antique fixtures catching low light, the absinthe fountain trickling at the center of it all. The design is New Orleans and Paris arguing gently over which one gets more credit.

Williamsburg regulars who have been coming for a decade, Manhattanites who cross the river deliberately for it, industry people on nights off, and a steady current of visitors who read one of the fifty lists it has been on. The mix skews serious — this is not a scene bar and the crowd knows it. Volume stays conversational even at peak. Later in the evening the room settles into what it does best, which is people drinking cocktails slowly and eating oysters and not shouting.

This is the best version of what a New Orleans-Paris oyster house on the Williamsburg waterfront can be, and the occasion that brings you back is the garden in June with a dozen oysters and the Absinthe Colada before dinner somewhere else. Skip it if you want a scene bar or a fast round — the cocktails take their time, and that is the format. Come for the room, the fountain, and the oysters, in that order.

One of the most transportive bar rooms in New York, built around a working absinthe fountain and a raw bar that runs thirty-plus varieties most nights. Reserve via Resy up to one month out and state garden vs. dining room when booking — the garden is only open April through November and it is the seat when it is available. If Resy is full, walk in to the horseshoe bar, which is arguably the better seat anyway. Order the Maison Absinthe Colada and a dozen oysters at minimum.
