Hong Kong's closed-loop cocktail bar operates without a reservation platform. Walk in, queue fifteen minutes on a Friday, and drink the city's most disciplined fermentation program.

The white tiles are the first tell. Penicillin looks less like a bar than a working laboratory tucked into the lower ground of Amber Lodge on Hollywood Road, and the fermentation lab visible on the way in is not decoration. Agung Prabowo built this room in 2020 as Hong Kong's first zero-waste cocktail bar, and the closed-loop program is genuinely executed rather than gestured at — the ferments in your glass were made from the peels and pulp of last week's drinks.

The room seats a couple of dozen across a short bar and a few tight tables in roughly 1,520 square feet. Two people works. Three works. Four is the ceiling before the room starts pushing back. There is no Resy page, no Tock landing, no OpenTable link — the reservation system is an email address, and most nights the answer is to walk in and wait.

The apothecary-meets-basement design reads as a working room rather than a set — the fermentation vessels are actually in use, and the compact footprint means the bartenders are working within arm's reach of every seat. Roughly 1,520 square feet, a short counter, a handful of small tables against the wall.

The Crowd

Weeknight rooms lean toward drinks-industry regulars, hotel bartenders on their off nights, and travellers who have done their reading — the fermentation program is a specific draw and the crowd reflects it. Friday and Saturday broaden out toward a Central after-work spillover that arrives around ten and stays until close, and guest shift nights bring a noticeably more electric energy as visiting bartenders take over the well. The room is small enough that the crowd is the crowd — one loud four-top changes the whole space.
