Decide Whether You're Here for the Trolley Before You Walk In

Mayfair's platinum-leafed cocktail room ranked #1 in the world twice. The martini is still the reason, but the access rules are the fine print.

The Martini Trolley pulls up to a corner banquette on a Tuesday at six, and the bartender lays out the bitters like a card trick — bergamot, lavender, coriander, ginger, cardamom, dry. The gin is poured tableside from a height that looks trained rather than showy, and the glass arrives at temperature. This is the ritual the room was built to stage, and if you don't ask for it, you have paid Mayfair prices for a drink you could get at a competent hotel bar in any capital.

Agostino Perrone has run the programme since the room opened, and under him it topped World's 50 Best in 2020 and again in 2021. David Collins, before he died, designed the Cubist-leaning interior — platinum silver leaf on the walls, a colour palette that reads darker than it photographs. What the Connaught is trying to be is the reference-standard hotel cocktail bar, benchmarked against the Painter's Room down the road and the American Bar at the Savoy. On the trolley alone, it clears that bar. On everything else, it is closer than the ranking suggests.

You come off Carlos Place — or, if you know, through the bar's own entrance from Mount Street that skips the hotel lobby entirely — past a doorman who has clocked you before you clock him. From the outside the doors give nothing away. Nothing about the approach tells you the room is Cubist and silver until you're through it, which is part of the theatre.

The room rewards hotel guests, Mayfair regulars, and the couple who booked at Hélène Darroze at the Connaught and walked over for a drink first. It excludes, in practice, the walk-up group of six on a Friday who assumed a bar ranked No. 1 on the World's 50 Best Bars in 2020 and 2021 would find them a corner. The crowd on a weeknight is quiet, moneyed, and largely there for the drink rather than the scene, which is the correct energy for what the bar is doing. On Thursdays and Fridays — the house's own call for the busiest nights — it tightens toward tourist-heavy and the pace of service slows accordingly.

The Connaught Martini at £30 defends itself: made tableside, poured from a trolley staffed by a bartender who has done it a thousand times, in a room that cost what this room cost. That is a fair price for that specific drink. Widen the round and the maths gets harder — the signature list runs £25 to £30, the Of the Moment menu up to £45, and a 15% discretionary service charge is added to the bill. That is in line with the Painter's Room at Claridge's and reads comparably to the American Bar at the Savoy. The line item that reads over-priced against the rest of the menu is the per-person minimum spend that applies if you sit on a reservation and order drinks and desserts only — a policy that turns a two-drink visit into a three-drink visit whether you wanted the third or not. Worth knowing before you book rather than after.

This is the best version of a Mayfair hotel cocktail bar built around a single signature ritual, and the occasion that brings you back is a Tuesday or Wednesday at six, one companion, one Martini Trolley each, one Allegro to follow, home before the room fills. Come back for that and it is close to perfect. Do not come back on a Thursday at nine with four friends and no plan — the room is not built for it, the seats are not there for it, and the bill will not thank you for it.

The rest of the Synergia menu is a very good hotel-bar programme that clears its Mayfair peers without embarrassment. Skip it if you are a walk-up group larger than four, if you want a bar stool, or if you're arriving on a Thursday night expecting the room to make space. The access model rewards planning; it punishes assumption.
