Not the cocktail bars, good as the best of them are, and not the cafés — the natural wine rooms, which score higher here as a group than any comparable set we've rated in London or New York, and which sit closer together than any other tier in the city: six of these seven fall inside two tenths of a point. La Buvette is a former butcher's shop in Belleville with a marble counter, eleven seats and a jar of giant beans, and it is the second-highest-scoring bar in Paris.
What these rooms have in common is that the list is the product and the price is honest — Aux Deux Amis pours a Thierry Puzelat Gamay at six euros a glass, Le Baron Rouge fills your bottle from the barrel, and the Bill at every one of them scores higher than at any palace bar in the city. Seven entries, no padding: the eighth room was seven tenths behind and would have been a courtesy.
