Zest

Cocktail Bar · Gangnam, Seoul · Reviewed by Travault Editorial
Directions

Book by Eight or Take Your Chances on the Waitlist

A zero-waste Gangnam cocktail bar where the seasonal gin does the talking and the seating clock starts the moment you sit down.

The prep lab sits where the back bar would be in any other room — a working surface, tools out, no bottles on display, the whole architecture of the place pointed at what the bartenders are doing rather than what they're pouring from. That inversion tells you what Zest is trying to be before anyone hands you a menu.

It's a sustainability-driven cocktail bar in Gangnam, on Dosan-daero 55-gil, working with Korean ingredients — Jeju citrus, seasonal produce — and in-house techniques: carbonation, fermentation, distillation, a homemade gin that changes with the seasons. The World's 50 Best Bars ranked it 18th in 2023, ninth in 2024 and 16th in 2025. It is not a secret and it does not price like one.

Zest is the rare programme-first cocktail bar where the ninety-minute clock is the honest cost of a seat, not a hospitality failure.

Editorial Deep

The Pour
DRINKS
8.9

Order the Z & T. It runs ₩27,000 and it is built on the house gin, which shifts with the season — meaning the drink you get in September is not the drink you'd get in February, and the bartenders will tell you which botanicals are running. That is the point of coming here. The Urban Bees at the same price is the other confident pick.

The Room
ATMOSPHERE
8.4

Minimalist, low-lit, and organised around that central prep lab rather than a back bar. No bottles on display, which strips the usual visual noise out of the room and puts the focus on the surface where the drinks are made. Seating is arranged for interaction — with the bartenders, with the person next to you — rather than for hiding in a corner.

The Crowd
VIBE
8.2

The room pulls a specific crowd: visiting cocktail travellers, Gangnam locals who take their drinking seriously, and industry people checking on the competition. It skews international at peak and Korean earlier in the evening. The energy is engaged rather than rowdy — people are here to taste, not to shout — until the weekend DJ sets push it warmer.

The Tab
VALUE
7.6

Cocktails land at ₩27,000, food ₩25,000–42,000. Two signature drinks each with a small plate puts a couple comfortably into the mid-hundred-thousands before anyone orders a third round. The prices sit at the top of Seoul's cocktail market and the drinks earn it; the charcuterie plate has left at least one reviewer cold, so let the kitchen support the drinking rather than lead it. The ninety-minute seating cap is the real line item — three drinks is the honest ceiling.

The Night
REPEAT
8.3

This is a programme bar, not a session bar. Come for two or three drinks, taste what the season is doing to the gin, and move on — the ninety-minute clock makes that decision for you. Return when the menu changes, which is the whole design. Skip it if you want to sit for four hours and drink the same thing twice; the room isn't built for it and the pricing punishes it.

Z & T (₩27,000) — the house gin, seasonal

“Book before eight, order the Z & T, plan for three drinks.”

Zest, second on Asia's 50 Best Bars in 2026, is built around a seasonal house gin and a zero-waste prep lab that actually changes what ends up in the glass. Book on CatchTable for a pre-8pm slot — after that it's waitlist only, and you're gambling on a walk-in. You get 90 minutes at the table, which is enough for about three drinks. Order the Z & T or ask the bartenders to steer by flavour; the signatures are where the programme lives. Skip the charcuterie and let the kitchen support the drinking.
