The Kolio arrives colder than a martini has any right to be, salt clinging to the rim, aquavit doing the work a good vodka only pretends to. It is described on the menu as the Scandinavian cousin of the martini, which sounds like marketing until you drink one. The herb note lingers. The salt reads as sea, not seasoning. This is what the bar wants you to order first, and the bar is right.
KABIN opened on Spring Street in 2024 under a fictional 'Nordic Air & Travel' menu conceit — aquavit-forward drinks, Scandinavian small plates, antler-mounted walls, food designed by Johnny Spero. What the conceit undersells is that the same room runs as a specialty coffee bar every weekday morning, pulling shots on Sey beans and pour-overs on Tim Wendelboe. Two bars, one address, and most people only know about half of it.

The Kolio is the anchor and the reason to sit down. Aquavit does what the menu promises — crisp, saline, herbaceous, colder and drier than the martini it's cousined to. Order it first. The Lillesand is the second move: gin, pisco, lingonberry, a sugared 'flavor stamp' pressed on the outside of the glass that the bartender points out before you clock it yourself. Tart, ruby, deliberately theatrical.
Conversation works at a normal volume, which in a Hudson Square bar in 2026 is already a decision. Music sits under the room, not on top of it. The interior is dark wood and cabin-warm — antlers on the walls, low lighting off sconces rather than pendants, banquette seating that reads more hunting lodge than downtown bar.
Downtown thirties, mostly, with a scatter of Scandinavian expats who found the place on Instagram and treat it as a consulate. The crowd is quieter than a Hudson Square cocktail bar has any business being — people are here for the drinks, not to be seen drinking them. Peak is Thursday and Friday between nine and eleven, when the room fills and the standing space by the bar gets held. Tuesday and Wednesday earlier are the sweet spot for a proper conversation with the bartender about the aquavit list.
KABIN Hour runs Tuesday through Thursday from 4 to 7pm, with martini and half-price bottle deals. Outside that window standard cocktail prices apply and the venue hasn't published them, so plan on downtown-Nordic pricing rather than dive money. The Swedish meatballs are the small plate to add; the Danish hot dog is the one people photograph.
KABIN is the best version of what it's trying to be on a Wednesday at 4:15pm — you walk in for KABIN Hour, order a martini and six oysters, stay for a Kolio at full price when the clock turns, and leave before the room fills. That is the night to build. Skip Friday and Saturday after ten unless you like standing. And skip it entirely if aquavit and gin-forward drinking isn't your register — the bar is honest about what it does, and it doesn't do bourbon.
