The Moët Hennessy Bar Where the Floor You Pick Is the Whole Decision

Four floors, four menus, one building on Boulevard Saint-Germain. Specify the floor when you book — or you'll have the wrong night.

A green marble bar catches the light on the upper floor and a Boulevardier lands in front of you at 18€, made with Hennessy Very Special because the building is backed by Moët Hennessy and the menu makes no attempt to hide it. Downstairs, a room dressed like a Parisian brasserie is pouring the same cocktail from a different card. Two floors up, a Rizzoli NY bookstore sits inside the same address. On the roof, a workshop with a mini-kiosk opens by invitation only.

This is Cravan Saint-Germain, on the corner of Boulevard Saint-Germain and rue du Dragon, named for Arthur Cravan — the dadaist poet-boxer and nephew of Oscar Wilde — and built into a listed Art Nouveau site that has hosted bars on this spot since 1911. The building operates as four bars stacked on top of each other, each with its own menu, seating, and mood. Treat it as one room and you'll miss the point of the whole thing.

One address, four bars, four cards — book the wrong floor and you have paid for the wrong evening.

The ground floor reads brasserie — wood, mirrors, a bar that looks like it has been polished by a century of elbows, because the Art Nouveau listing means most of what you're looking at is protected. Move up one flight and the room resets: velvet stools, a green marble bar, a tighter footprint. Two more floors sit above that, each doing its own thing, and the top-floor workshop with its rooftop kiosk is behind an unmarked door and stays behind it unless you've been invited.

Saint-Germain-des-Prés at drinking hour, which means a Left Bank crowd with money and enough French to order in it, plus the visitors who read the Michelin two-day itinerary and made the reservation. The room reshuffles by floor: the brasserie ground floor pulls the walk-in and after-work crowd, the upstairs bars pull the people who booked and know which stool they want. It gets busy fast and stays civil — nobody is fighting for your seat, but somebody is waiting for it.

Do not order Royals up the ladder. The champagne-topped list runs 20€ to 45€ and the top of that range buys a glass of good champagne with a cocktail poured into it — a legitimate drink at a legitimate price, but the ceiling clears the sensible height fast if you order two rounds of them. Cocktails otherwise sit at 16€–18€, which is the going rate for a serious Saint-Germain bar and defensible against the room, the address, and the pour. Two rounds of the house classics for two people lands around 70€ before food. Apple Pay and contactless work, which sounds trivial and is not — plenty of Paris cocktail bars still make you find a card reader.

Come back on a warm Thursday when the terrace is open and Bar 3 upstairs has a stool free — that is Cravan at its best, two floors deep with a green marble bar and a bartender who remembers what you drank last time. Skip it if you want one room and one card for the whole evening; the building is built for the opposite and the tight interior punishes anyone who doesn't book the floor they wanted.

The programme is serious, the address is Saint-Germain-des-Prés, and the building splits into four bars with four cards — which is the whole point and the whole risk. Pick the floor before you go, sit upstairs for the bartender-made cocktails, take the terrace in warm months, and stay away from the top of the Royals list unless champagne is what you came for.
