Above it, a custom light fixture in curved brass that would not look out of place in a Klimt painting. Below the counter, a room that holds maybe twelve people if everyone is polite about their elbows. This is the ground floor of Bar Nouveau, and it is only half of what is here.
Remy Savage runs it — the same bartender behind London's A Bar With Shapes For A Name, which is where the discipline comes from: six or seven drinks on the menu, no more, each one built to a specific idea. The upstairs is the classic room, Art Nouveau lighting and a short list of cocktails you can order without reading twice. The downstairs is a blacklight den with its own menu, which is where the drinks get twisted. Same base ideas, different treatment. Most people never find out because they queue for upstairs and leave.

The Ramos is what to order. It reads as a vanilla milkshake on paper — vodka, St-Germain, vanilla yogurt, cream, a float of peaty whisky, a dash of Perrier — and it drinks like one for the first sip before the smoke turns up at the back.
At 3 PM on a Tuesday, the ground floor is a jewel box — daylight through the front, brass light fixtures picking up the varnish on the wood, a bartender polishing a glass because there is no one to serve yet. This is the version of Bar Nouveau to see if you care about the room. Ten seats, maybe twelve, and you can hear the ice.
Early evening is cocktail-serious Parisians and the odd off-duty bartender comparing notes. Later, it turns to a younger Marais crowd on a night out — cocktail pilgrims mixed with locals who know the door is small and are prepared to wait for it. The room is too tight to be loud, which keeps the energy conversational rather than clubby, but it also means one boisterous group of six changes the temperature of the whole ground floor. Downstairs absorbs the pressure. If the upstairs crowd is wrong for you, the answer is one flight down.
Little Red Door and Danico both run materially higher for drinks that are no more considered, and Combat sits closer to the same tier.
Bar Nouveau is a first call, not a destination — a Marais night that starts with two drinks here and ends somewhere else. Arrive at 3 PM opening for the room, or after 11 PM when the first wave has moved on. What it is not is a bar for a group of six, a bar for a long session at a table, or a bar for anyone who needs a guaranteed seat — the format does not bend. Come as a two, take whichever floor has room, order the Ramos, and go find dinner after.
