The three Tokyo ramen shops that held a Michelin star until 2024, Nakiryu, Konjiki Hototogisu and Ginza Hachigo, lost it in that guide and moved to Bib Gourmand in 2024. None of that changes the bowl. Kagari's chicken paitan leads this list by a margin smaller than the rounding on this page, and Ginza Hachigo, a consommé-style broth from a chef who cooked French before he cooked ramen, is second.

Every room here is walk-in, which means the queue is the booking system and the hour you arrive decides the meal. The bill is what lifts the top of this list and the room is what holds the bottom: Fuunji serves one of the best tsukemen in the city at a counter you will be glad to leave. Bring cash, go early, and order what the entry tells you to.
