Nine of these eleven counters put the fish near the top of everything we have rated in Tokyo, so the plate does not decide this list — the bill and the door do. Harutaka leads: three stars in the 2026 guide, the warm-shari Jiro school, and still a counter that takes a booking from someone it has never met. Sukiyabashi Jiro is tenth, holding the joint-highest plate in our Tokyo corpus, because the room will not take your call and the price has climbed to ¥88,000; the entry says what to book instead.
Every entry names its booking route, since in this format that is most of the difficulty. Some go through a platform in English, some only through a hotel concierge, one runs on a 5am sign-up sheet at Toyosu, and three do not take new customers at all. At Sushi Sho and Sushi Kanesaka, two of the dearest counters here, lunch costs a fraction of dinner.
