The open kitchen is the first thing that pulls focus — a long, lit line visible from every seat in the room, cooks moving through a seven-course sequence without the theatre most kitchens reach for when they know they're being watched. The room is small enough that the pass is a piece of furniture, not a stage. Modern Korean is the frame, French technique threaded through it, and the tasting menu is the only way in.

Meta sits on Mohamed Sultan Road, in the low-rise stretch of River Valley where the crowds thin after 8pm. It holds two Michelin stars, the second awarded in 2024, and a place at No. 28 on Asia's 50 Best Restaurants for 2024. The cooking has been called modern Korean by most and French-Korean by some, and both readings hold up depending on which course lands in front of you.

What was cleared: every course, plate returned bare, the sauces wiped through with the last of the bread. What was left behind: nothing that read as filler, no course that felt like the kitchen buying time between the two peaks. Seven courses is a length that exposes a menu — thin sections show up fast — and this one holds its line from the opening bites to the last savoury plate.

The pass is brushed steel, lit from above, and it runs long enough down one side of the room that the cooks working it are effectively part of the seating plan. Tables are close but not stacked, chairs are cushioned rather than designed, and the lighting is warm and low without tipping into the candlelit register that turns a serious kitchen into a date-night gimmick. Sound sits at a working level — cutlery, the low register of a kitchen calling courses, no music pushing anything.

Book the reservation before you plan the trip. This is not a walk-in room and there is no bar to fall back on if a table doesn't come free.

Start with what the $328 is not paying for. It is not paying for a room designed by a name; the room is careful but modest. It is not paying for an address in a landmark building or a hotel podium. What the money buys is the kitchen: an eight-course run at Meta's level of execution, cooked by a team working a menu with two Michelin stars, the second awarded in 2024, that sat at No. 28 on Asia's 50 Best Restaurants in 2024.

The person to bring next time is someone who wants to watch the kitchen work — a cook, a serious eater, the friend who reads menus back to front. The person not to bring is the four-top wanting a long, loose Saturday night with wine and conversation looping past midnight; the tasting format and the 6pm start on most nights do not bend for that evening.
