The Vegetable Kitchen Behind Pedregal's Volcanic Stone

Edgar Núñez's plant-forward kitchen in Jardines del Pedregal, one Michelin star since 2024, rewards the à la carte order and the phone call it takes to get there.

The kampachi tostada arrives with fermented tomatoes doing the work chile usually does — sharper, funkier, more insistent — and the fish underneath barely needs the introduction. This is the register Edgar Núñez has been writing in since 2008, and it is why the room sits where it sits on Mexico's dining map.

Núñez opened Sud 777 in Jardines del Pedregal that year and has spent the intervening time arguing that Mexican cooking is a vegetable cuisine as much as a meat one — cocina vegetal mexicana, the phrase he uses. The Michelin Guide handed him a star in 2024, in its first edition covering Mexico. The World's 50 Best listed the room at No. 47 on Latin America's 50 Best Restaurants 2024. Both landed on a kitchen that had already been doing this work for over a decade.

The vegetables carry this menu the way the proteins carry most others, and Núñez has been proving that point since 2008.

The spinach comes sautéed in sherry over an almond and garlic puree, and the puree does something the spinach could not do alone — it holds the sherry, absorbs the garlic, and gives the leaf a base to sit on rather than swim in. This is the small mechanical trick that runs through the menu: a vegetable is treated as the centre of the plate rather than the side, and the sauces are engineered accordingly. Núñez calls the register cocina vegetal mexicana, which is a claim about what Mexican cooking already is more than an invention.

The Room

At 8pm on a Thursday the room is full and the ceilings are doing their job — lofted enough to swallow the volume, dark wood and earthy walls keeping the light where the plates are. By 11pm on the same night the tables have thinned, the plants read heavier against the emptying room, and the kitchen's pacing loosens with it. Sud 777 does not run on one register; it runs on the sitting.

The Table

A server noticed, mid-course, that the bluefin had arrived a beat before the plate meant to precede it and quietly reordered the pacing without making it anyone's problem. That is the level the floor runs at when it is running well — informed, calm, not performative. Menu knowledge is real; ask what is on the à la carte that is not on the tasting menu and the answer comes without a pause.

The Bill

The comparison a Mexico City reader will reach for is Pujol, on Tennyson in Polanco — the same one-star tier, the same modern-Mexican conversation, a bigger name and a materially bigger evening at the door. Sud 777 sits below Pujol on cachet and slightly below it on architectural ambition; it sits meaningfully less on the bill, from what the room quietly signals about its own pricing versus what Polanco's headline rooms command.

The Return

Skip the return trip if you came for the tasting menu and left underwhelmed by the pour — the wine programme is the room's soft spot, and a second tasting will not fix it. This is not the venue for the diner who measures a tasting menu by how the pairing lands.
