The Turbot Is the Reason, and It Is Sold by the Kilo

A sea-of-embers grill house on Herrerieta Kalea, cooking whole turbot skin-on over coals. The turbot earns the drive from San Sebastián.

The turbot arrives whole and black-skinned, laid across the plate like something the sea gave up reluctantly, and the server works it apart at the table with two spoons — cheeks first, then the gelatinous kokotxa strip along the jaw, then the flakes off the frame. The skin has taken the fire hard on one side and stayed soft on the other. The flesh underneath is barely set. This is the dish that put Getaria on the map for people who care about grilled fish, and it is the dish half the coast is now imitating.

Chef Aitor Arregi carries on the grill his father, Pedro Arregui, opened on Elkano Kalea in 1964, since moved to Herrerieta Kalea. Elkano titles its own page "Referente Mundial del Rodaballo" — the world reference for turbot — and the menu still changes by what the arrantzales land that morning and what the baserritarras bring from the hills behind town, and the tasting menu — the 43º, 2' at €195 — takes its name from Getaria's latitude, which tells you something about how seriously the room takes its own geography.

The turbot earns the drive from San Sebastián, and the whole room is built around it.

Not everything on the tasting menu lands at the level the turbot sets. Some of the intermediate courses read as scaffolding around the fish rather than as their own arguments — a plate arrives, gets acknowledged, gets cleared, and the meal moves on toward what everyone came for. The kitchen's restraint, which is the house style, occasionally reads as thinness on the courses that aren't the headliners.

Herrerieta Kalea is a short, narrow street off the harbour, and Elkano occupies a corner of it that gives away almost nothing from outside — a plain frontage, the name in restrained lettering, none of the theatre a celebrated grill house on the Basque coast might have talked itself into. The outdoor grill and its parrillero are around the side; you smell the fire before you see the door, and then you are through it.

The turbot at €145/kg is the item on the bill that has to work hardest and does. At €145 a kilo, a whole turbot for two is the headline protein, and for that money you are getting a whole rodaballo cooked over embers by the people who wrote the local grammar for cooking it. The imitators along this coast charge inside the same range for a smaller argument. Defend that line and the rest of the bill defends itself.

First visit is the turbot on the à la carte and one supporting order — the spiny lobster if the table is celebrating, the plain lobster if it isn't — and a bottle of local txakoli from the hills you drove past on the way in. Second visit is the turbot again, because the turbot is why the place exists, plus the kokotxas as a starter in their own right rather than as the strip you fight for at the end. Third visit is when you start trusting the kitchen with the wider menu.

If the calendar doesn't allow a booking, try Kaia Kaipe on the same harbour for its own grilled fish, or drive to Etxebarri if the pilgrimage is what you want. Elkano is the fish-first version of the argument and the one to plan around when the plan allows.
