One surprise seasonal tasting menu, booked weeks ahead through a passage entrance. Aramburu asks for control of the whole evening and is firm about who it cannot feed.

The entrance off Vicente López 1661 is anonymous, reached through Pasaje del Correo, which one critic compared to finding a hidden portal. The room beyond is upscale-quiet, almost reverent. A glass wall opens onto the kitchen, where Gonzalo Aramburu can often be seen at the stoves.

Aramburu is a Relais & Châteaux member and serves a single surprise tasting menu built on local, seasonal produce, with no à la carte alternative. Once seated, the diner has nothing left to decide: the menu runs the evening.

One fixed tasting menu, no edits, no à la carte: Aramburu works only for diners who can hand over the whole evening.

The Room

The tablecloths are white. One critic described the atmosphere as upscale-quiet, almost reverent. A large glass wall opens onto the kitchen, which in that critic's words gives all the theatre of watching the action without any of the noise. The chef is often visible at the stoves.

Check the dietary policy before anything else. The single tasting menu cannot accommodate allergies to aromatic herbs, garlic, onions or citrus, and there are no Kosher, Keto or Vegan alternatives. Then book two to three weeks out.

The Bill

Good

Much of the bill is not food at all. The pairings are priced as separate products, and the choice among them, from the non-alcoholic Mocktails to the Prestige wine list, moves the evening's total further than any decision on the plate. The menu is the fixed cost and the pairing is the lever.

The Return
REPEAT
Good

The case for a second visit is the seasonal turn. The menu changes with produce, so a return in a different season gets a different set of courses, and a different pairing gives a further variation. The egg with rainbow trout tartare is a seasonal dish and may or may not return.
